The ‘Sfinec ta’ San Guzepp’ are a traditional sweet prepared for the feast of St. Joseph, held on the 19th of March. The recipe for the dough is a basic choux pastry. It is deep fried and filled with sweetened ricotta.
Ingredients:
- 625 ml water
- 175 grams butter
- 375 grams flour
- 100 grams sugar
- 7 or 8 eggs
- Lemon zest
- Some vanilla
- Icing sugar for decoration
- Oil for frying
Ingredients for Filling:
- 1 kg ricotta
- 120 grams icing sugar
- 150 grams chopped almonds
- 100 grams cherries
- Some vanilla
Method:
- Boil water ,sugar and butter.
- Whilst boiling add the flour and mix well.
- Remove from heat and continue mixing.
- Return to heat and continue mixing.
- Add the lemon zest and vanilla.
- Place in a mixer and beat well, and start adding the eggs one at a time.
- With an oiled ice cream scoop pick up some mixture and fry.
